Spinach and Cheese Calzones







I am in love with these things! Not only are they easy as can be, but you could add just about anything you want to them. You really can't go wrong with cheese and dough add in some spinach and I am in Heaven. If I had more time, I would maybe make the dough from scratch but when you are in a time crunch these are perfect. My oldest son even asked for seconds! We don't eat meat, so we kept ours with cheese and veggies but you could easily add in any kind of meat you want. Here is what you will need:



*Preheat your oven to 375


*On a lightly floured surface, roll out your refrigerated pizza dough into a large rectangle


*Cut into 4 squares




*In a large bowl mix together 10oz ricotta cheese, 1.5c shredded mozzarella cheese, 12oz frozen spinach cooked and drained, 3 chopped green onions, and salt & pepper to taste




*Spoon a good amount of the filling onto each square of dough that has been placed on a non-stick cooking sheet


*Fold the dough over and crimp the edges with forks or roll them up




*Make an egg wash with 1 tbsp water and an egg whisked together


*Brush the tops of the calzones with the wash and cut a small slit in the tops of them


*Bake for 20-5 minutes or until golden brown




*Serve with marinara sauce for dipping
